Vegetarian Jambalaya

  • 1 Tbsp vegetable oil
  • 1/2 lb vegetarian sausage
  • 1 1/4 cups onion minced - 1 med/lg.
  • 5/8 cups green pepper diced - 1/2 large
  • 5/8 cups celery diced - 2 stalks
  • 2 medium garlic cloves crushed
  • 2 1/2 cups vegetable broth - 20 oz
  • 1 cup V8 juice
  • 2 medium bay leaves
  • 1/2 tsp salt
  • 1/2 tsp ground thyme
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cajun seasoning
  • 1 Tbsp paprika
  • 1 1/4 cups white long-grain rice uncooked
  • 1/2 cups green onions chopped


  1. Heat oil and brown sasauge.
  2. Remove sausage and saute onions, garlic, celery, and green peppers. Return sausage to pot
  3. Add liquid and seasoning and bring to boil. Add rice and return to boil. Reduce heat, cover, and simmer. After 10 min turn rice from top to bottom. Simmer for total of 30 min. Heat must be low enough to not burn bottom.
  4. Optional: Prepare without rice ahead of time. Reheat and cook with rice for 30 min.
  5. Add additional liquid as required during heating.
  6. Just prior to serving add green onions.
