Tahini Cauliflower - True Food Kitchen

Cauliflower

  • 1 large head cauliflower cut into florets
  • 2 Tbsp oil
  • salt and pepper to taste


Harisa Tahini Sauce

  • 1/4 cup tahini
  • 2 Tbsp lemon juice
  • 1/2 - 1 Tbsp Harisa paste
  • 1/2 tsp sea salt
  • 1/4 tsp dried dill


Garnish

  1. 2-3 Medjool dates - pitted and cut into small pieces
  2. 3 Tbsp shelled pistachios - chopped
  3. 2 Tbsp fresh dill - finely chopped
  4. 1-2 Tbsp fresh mint (Optional)


Preparation

  1. Preheat oven to 450F, toss the cauliflower florets with oil, salt, and pepper
  2. Bake 15-20 min or until the cauliflower is golden and tender and just starting to char in a few places
  3. Whisk all the sauce ingredients together in a bowl, along with 2-3 Tbsp water for a thick but pourable consistency
  4. When cauliflower is done transfer to a bowl and drizzle with half the dressing along with the dates and pistachios. Toss gently and add more dressing to taste. Garnish with fresh dill and mint


Serves: 8      Total cook time: 25 min.
