Cauliflower
Harisa Tahini Sauce
Garnish
2-3 Medjool dates - pitted and cut into small pieces
3 Tbsp shelled pistachios - chopped
2 Tbsp fresh dill - finely chopped
1-2 Tbsp fresh mint (Optional)
Preparation
Preheat oven to 450F, toss the cauliflower florets with oil, salt, and pepper
Bake 15-20 min or until the cauliflower is golden and tender and just starting to char in a few places
Whisk all the sauce ingredients together in a bowl, along with 2-3 Tbsp water for a thick but pourable consistency
When cauliflower is done transfer to a bowl and drizzle with half the dressing along with the dates and pistachios. Toss gently and add more dressing to taste. Garnish with fresh dill and mint
Serves: 8 Total cook time: 25 min.
