Sweet Potato and Apple Kugel

  • 4 eggs
  • 1/2 tsp salt
  • 2 large sweet potatoes (2 lbs) - peeled and grated
  • 2 slightly tart apples (Gala, Braeburn) - peeled, cored, grated
  • 1 Tbsp lime juice
  • 1 Tbsp honey
  • 2 + 1 Tbsp unsalted butter - melted

  1. Heat oven to 375 deg. Cooking spray a 2 qut baking dish.
  2. In large bowl beat the eggs with salt. Add the grated sweet potatoes and apples. Pour the lime juice over the grated potatoes and apples, stir everything together. Combine the honey and 2 Tbsp melted butter, then combine with sweet potato mixture, combining well.
  3. Transfer mixture to prepared baking dish. Cover tightly with foil and place in the oven. Bake 45 min. Remove the foil and brush the top with melted butter. Return to oven and bake for another 15-20 min., brushing every 5 min with butter. Kugel is done when edges are browned, the top is browned in spots and the mixture is set.
  4. Remove from oven and allow to cool for 10-15 min. before serving.
