Steak Sous Vide Marinade

  • 3 Tbsp soy sauce
  • 3 Tbsp fish sauce
  • 1 Tbsp Worcestershire Sauce
  • 1 tsp MSG
  • 1 Tbsp roasted garlic (alternative: garlic powder)
  • 1 Tbsp blue cheese
  • 1/2 tsp anchovy paste


  1. Combine and blend ingredients. Marinade steaks in container or vacuum bag with steaks. Marinade for 0-24 hr.
  2. Sous vide at 127 deg for 2 1/2 hours. Initial water temp of 132 deg results in 126-127 when steaks added.
  3. Pat surface dry and singe with torch.


Serves: 4 steaks      Total marinade time: 0-24 hr
