Spinach Loaf

  • 2 cups finely chopped spinach or 3-10oz frozen chopped spinach (thawed overnight)
  • 1 cup finely chopped onion
  • 1 cup chopped celery
  • 1 cup bread crumbs
  • 2 eggs
  • 1/2 lb cottage cheese (optional)
  • 2 Tbsp melted butter
  • 1/2 tsp salt
  • 1/4 tsp nutmeg

  1. If using frozen spinach thaw overnight and squeeze out bulk of water
  2. Preheat oven to 375 deg. Saute onion and celery in skillet until soft, 5-7 min. for softer taste.
  3. In mixing bowl combine all the ingredients. Spray 9×5 loaf pan with nonstick. Place the mixture into the prepared pan.
  4. Cook for 1 hr or until loaf is hot and bubbling at edges. Serve immediately.

Serves: 6-8      Total cook time: 50 min.
