Spinach Loaf

  • 2 cups finely chopped spinach or 3-10oz,1-16ozTJ+10oz,2-12oz frozen chopped spinach thawed
  • 1 cup finely chopped onion
  • 1 cup chopped celery
  • 1 cup bread crumbs (2 slices)
  • 2 eggs
  • 1 cup cottage cheese (optional)
  • 2 Tbsp melted butter
  • 1/2 tsp salt
  • 1/4 tsp nutmeg


  1. If using frozen spinach thaw overnight and squeeze out bulk of water
  2. Preheat oven to 375 deg. Saute onion and celery in skillet until soft, 5-7 min. for softer taste.
  3. In mixing bowl combine all the ingredients. Spray 9×5 loaf pan with nonstick. Place the mixture into the prepared pan.
  4. Cook for 70 min. or until loaf is hot and bubbling at edges. Serve immediately.


Serves: 6-8      Total cook time: 70 min.
