Sauteed Vegetables Pita
2 Tbsp olive oil
1 onion - chopped
2 garlic cloves - diced
1/2 cup mushrooms - sliced
2 carrots - peeled and diced
1 potatoe - peeled and diced
2 cups broccoli - chopped
1 small eggplant - peeled and diced
1 green bell pepper - cored and diced
1 cup frozen corn
sauce - alternative - roasted garlic peanut, salsa, etc.
1 cup shredded cheese - alternative - cheddar, mozzarella, goat, etc.
8 pita halves or tortillas
Any combination of vegetables may be used. Sauce and cheese are optional.
Heat oil in large nonstick skillet. Sautee onion and garlic until lightly browned.
If using mushrooms sautee until release juice.
Add and sautee hard vegetables - carrot, potatoe
Add and sautee medium vegetables - broccoli, eggplant
Add and sautee soft vegetables - bell pepper, frozen corn
If using sauce add and stir.
If using cheese add and stir.
Spoon into pita halves or tortillas to serve.
Serves: 8 Total cook time: 15 min.
