Sausage and Cabbage

Skillet Sausage 'n' Cabbage

  • 16 oz kielbasa sausage - cut into 1/2“ pieces
  • 1 onion - thinly sliced
  • 1 green bell pepper - cut into strips
  • 6 cups coarsely chopped cabbage
  • 1 cup dry white wine or chicken broth
  • 1/2 tsp caraway seeds
  • 1/2 tsp salt
  • 1/2 tsp pepper

  1. Saute sausage in large skillet over medium heat until browned. Remove from pan
  2. Add onion and bell pepper to skillet and saute 2-3 min. Add cabbage and cook, stirring often, 8 min.
  3. Add sausage, wine, and remaining ingredients. Reduce heat and cook 10 min. or until cabbage is tender
  4. Approx. Total cook time: 30 min.

NYT Sausage and Cabbage

  • 1 1/2 Tbsp butter
  • 1 lb Sweet Italian sausage - remove casing and cut into chunks
  • 2 lb cabbage - cut coarse
  • fresh ground black pepper
  • crusty bread and mustard - serve with dish

  1. Heat oven to 300 deg.
  2. In large pot boil salted water. Add cabbage, when comes back to boil, boil for 3 min. Drain into colander and run cold water to stop cooking.
  3. Add 1/3 of cabbage to baking dish, spread 1/2 meat, sprinkle with salt and pepper, dot with butter dots. Repeat ending with cabbage and butter dots.
  4. Cover tightly with parchment, top with lid or aluminum foil. Large pyrex baking dish with lid works well.
  5. Cook for 2 hr. Uncover and cook for additional 30 min. Serve with crusty bread and mustard.
