Roasted Sweet Potatoes, Pears, and Walnuts
2 sweet potatoes - peeled, cut lengthwise, cut into 1/2โ half rounds
2 pears - unpeeled, cut into 1/4โ thick slices
1 red onion - cut into 1/2โ wedges
3 Tbsp olive oil
salt and pepper
1/2 cup coarsely chopped walnuts
1 Tbsp honey - drizzled over cooked vegetables
2 tsp chopped fresh sage - sprinkled over cooked vegetables
Heat oven to 425 deg.
On large cooking sheet combine vegetables and olive oil, salt, and pepper. Spread in even layer and roast for 20 min.
Add walnuts and cook an additional 10 - 20 min. until vegetables are tender.
Drizzle with honey and sprinkle with chopped sage.
Serves: 4 Total cook time: 30-40 min.
