Roasted Cabbage Steaks

  • 1 med head of cabbage
  • vegetable oil spray
  • 1 Tbsp canola oil
  • 1/2 tsp whole caraway seeds
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 Tbsp brown sugar
  • 2 Tbsp golden balsamic vinegar - optional


  1. Heat oven to 400 deg. Cut core off head, set on cutting board on flat end, cut into 1/2“ slices.
  2. Arrange in single layer on large baking sheet or pan sprayed with vegetable oil. Brush each slice with oil.
  3. Using mortar and pestle crush caraway seeds. Add garlic powder, salt, pepper, and brown sugar. Stir to mix. Sprinkle over steaks.
  4. Roast 30-40 minutes until begin to caramelize. If using , drizzle with balsamic vinegar before serving.


Serves: 4-6      Total Cook Time: 40 min.
