Pumpkin Pancakes
1 1/2 cups milk
1 cup pumpkin puree
1 egg
2 Tbsp vegetable oil
2 Tbsp vinegar
2 cups flour
3 Tbsp brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp salt
In medium bowl mix together the milk, pumpkin puree, egg, oil, and vinegar. In small bowl combine the dry ingredients.
Stir the dry mixture into the wet mixture and mix just long enough to combine. Add additional milk to provide the desired consistency.
Heat a lightly oiled griddle over med-high heat. Scoop onto griddle and brown on both sides.
Serves: 4-5
