Picadillo
2 Tbsp olive oil
2 med onions - chopped
2 oz. dried chorizo - diced
4 garlic cloves - minced
1 1/2 lb. ground beef
fresh ground pepper and salt
28 oz. can whole tomatoes - drained and crushed
2 Tbsp red wine vinegar
1 Tbsp ground cinnamon
2 tsp ground cumin
2 bay leaves
pinch ground cloves
pinch ground nutmeg
2/3 cup raisins
2/3 cup stuffed olives
Heat oil in dutch oven or heavy pot. Add onions, chorizo, and garlic. Cook approx 10 min. until onions soften.
Add beef. Breakup and cook until meat is browned. Add salt and pepper to taste.
Add tomatoes, vinegar, cinnamon, bay leaves, cloves, and nutmeg. Stir to combine. Lower heat, cover pot, simmer for 30 min.
Uncover pot, add raisins and olives, cook for 15 min.
Serve with white rice.
