Penne with Zucchini and Feta

  • 16 oz uncooked penne or similar pasta
  • 1 Tbsp olive oil
  • 1 tsp dried oregano
  • 4 medium zucchini halved lengthwise and diced
  • 4 garlic cloves crushed
  • 1 cup fat-free, less sodium chicken broth or vegetable broth
  • 1 tsp grated lemon rind
  • 1 Tbsp lemon juice
  • 1/2 tsp black pepper
  • 6 oz crumbled feta cheese - plain, basil, or tomatoe flavored


  1. Cook the pasta according to directions omitting salt or fat
  2. While the pasta cooks heat the oil in a large skillet. Add the oregano, zucchini and garlic; saute 4 min.
  3. Stir in the broth, lemon rind, juice and pepper. Add the pasta and cheese, toss well and serve immediately.


Serves: 6      Total cook time: 15 min.
