Penne with Zucchini and Feta
16 oz uncooked penne or similar pasta
1 Tbsp olive oil
1 tsp dried oregano
4 medium zucchini halved lengthwise and diced
4 garlic cloves crushed
1 cup fat-free, less sodium chicken broth or vegetable broth
1 tsp grated lemon rind
1 Tbsp lemon juice
1/2 tsp black pepper
6 oz crumbled feta cheese - plain, basil, or tomatoe flavored
Cook the pasta according to directions omitting salt or fat
While the pasta cooks heat the oil in a large skillet. Add the oregano, zucchini and garlic; saute 4 min.
Stir in the broth, lemon rind, juice and pepper. Add the pasta and cheese, toss well and serve immediately.
Serves: 6 Total cook time: 15 min.
