Pasta with Green Beans and Potatoes with Pesto

*1 lb small potatoes - peeled and sliced 1/4" thick
*1 lb green beans - cut into 1" lengths
*1 lb linguine or other thick pasta
*1/2 cup pesto (enough for 1 lb pasta)
*1/2 cup grated Parmesan cheese (optional)


  1. Bring 4 quarts water to rolling boil. Add at least 2 Tbsp salt and add potatoes, cook for 3 min. Add green beans and cook for 5 min.
  2. Add pasta and stir. Cook until pasta is al dente. Check potatoes for doneness and cook an additional 1-2 min if required.
  3. Drain water from pasta. Add pesto and stir. Add grated Parmesan and stir. Serve immediately.


Serves: 5      Total Cook Time: 20 min.
