Pasta with Green Beans and Potatoes with Pesto


  • 1 lb small potatoes - peeled and sliced 1/4“ thick
  • 1 lb green beans - cut into 1” lengths
  • 1 lb linguine or other thick pasta
  • 1/2 cup pesto (enough for 1 lb pasta)
  • 1/2 cup grated Parmesan cheese (optional)


  1. Bring 4 quarts water to rolling boil. Add at least 2 Tbsp salt; add potatoes, and green beans and cook for 5 min.
  2. Add pasta and stir. Cook until pasta is al dente. Check potatoes for doneness and cook an additional 1-2 min if required.
  3. Drain water from pasta. Add pesto and stir. Add grated Parmesan and stir. Serve immediately.
  4. Alt: 1/2 size batch


Serves: 5      Total Cook Time: 20 min.
