Oklahoma Onion Burgers
1 lb. ground beef - preferably 20-30% fat
Kosher salt and fresh ground pepper
2 med or 1 large yellow or white onion - sliced as thin as possible
4 slices American cheese
4 soft sturdy buns
dill pickles and condiments as desired
Divide the beef into 4 even balls. Mold so cohesive and tacky, Shape into balls. Refrigerate until ready to cook.
Shape each ball into disk shape patty about 3“ across. Season with salt and pepper, flip over and create large mound of onions on top.
Place patties in heated skillet. Smash the burger and onion with stiff spatula to form 4 1/2 - 5” patty. Replace stray onions back on top. Season lightly with salt and pepper.
Cook stationary until edges dark brown, 1 -2 min. With spatula upside down loosen edge of patty and any stuck on. Flip patties so onion side is down and tuck stray onions under.
Add cheese to each patty, followed by top half of bun, and bottom half of bun split side down. Cover pan to melt cheese and steam bun.
Cook until edges browned and buns are steamed, 1 -2 min. Remove bottom buns, add desired condiments, place burger and top bun on top.
