Homo Pasta

  • 1 lb. pasta
  • 2 Tbsp olive oil
  • 1 onion - chopped
  • 3 cloves garlic - minced
  • 3-4 chopped tomatoes (alternate: drained 28oz diced tomatoes)
  • 1/4 cup chopped basil (substitute 3 tsp dried basil)
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • ground pepper
  • 6-9 oz. smoked Gouda - grated 1 Trader Joe round
  • 1 cup heavy cream alt:1 cup milk + 1tsp cornstarch


  1. Cook pasta according to directions for firm pasta. Drain after cooking and add 1 Tbsp olive oil to prevent sticking.
  2. In large skillet saute onion in olive oil until softened, about 5 min. Add garlic and saute for 2 min.
  3. Add tomatoes, basil, parsley, salt, pepper. Turn down heat, cover, let simmer until mushy. Add cream, stirring until hot. Add grated cheese, stir until melted.
  4. Add contents of skillet to drained pasta either in pasta pot or directly into a casserole dish. Bake at 380º for about 20 minutes until browned on top.
