Grilled Pork Kebabs with Siracha Glaze

  • 1 1/2 - 2 lb pork loin - cut into 1โ€œ chunks
  • 1 tsp kosher salt
  • 3 Tbsp packed brown sugar
  • 1 1/2 Tbsp Siracha
  • 1 tsp cornstarch
  • vegetable oil spray
  • 1/4 cup minced fresh cilantro


  1. If not enhanced pork toss pork and salt together in large bowl and let sit for 20 min.
  2. Meanwhile whisk, sugar, Siracha, and cornstarch together in small bowl. Set aside 1 1/2 Tbsp mixture.
  3. Add remaining Siracha mixture to pork and toss to coat. Thread pork onto 4 - 12โ€ metal skewers, leaving 1/4โ€œ between pieces. Spray both sides of meat generously with oil spray.
  4. Cook on hot grill until well charred, 3-4 min. Flip skewers, brush with reserved glaze, and continue to grill until second side is well charred and meat registers 140 deg., 3-4 minutes longer.
  5. Transfer to serving platter, tent loosely with foil, and let rest for 5 min. Sprinkle cilantro over top.
  6. Alternative: Cook pieces in hot skillet turning to brown all sides and until 140 deg. Add remaining sauce near end.
  7. Alternative: Cook pieces dir ectly on grill without skewers


Serves: 4        Total cook time: 10 min.
