Glazed Pork
Rub
Sauce
1/4 cup dark raisins
1/4 cup orange juice
3 Tbsp balsamic vinegar
2 Tbsp capers
1 Tbsp brown sugar
Cut the pork crosswise into 1/2“ thick slices. Easiest slicing partly frozen.
In a small bowl, combine the rub ingredients(flour, 1 Tbsp brown sugar, salt, cumin, cardamon, and red pepper). Rub the mixture evenly over the pork pieces.
In a small bowl combine the sauce ingredients(raisins, orange juice, vinegar, capers,1 Tbsp brown sugar). Stir until the sugar dissolves.
In large nonstick skillet, heat the olive oil. Add the pork pieces; cook 2 min. Turn the pieces over and cook 1 min. more. Add the sauce, cook 1 min. or until the sauce thickens and the pork is done.
Serving suggestion - serve with couscous cooked with chicken broth & topped with parsley.
Serves: 3-4 Total cook time: 5 min.
