Eggplant Rounds

  • 1/2 cup cornmeal
  • 1/2 tsp chile powder
  • 1/4 tsp dried oregano
  • 1/2 tsp salt
  • 1 eggplant sliced into 1/2“ rounds
  • mayonnaise


  1. Mix dry ingredients in bowl or dish
  2. Lightly coat cut eggplant surface with mayo and dip into cornmeal mixture.
  3. Place on baking sheet and cook in oven at 400 deg until eggplant is soft and surface is browned, about 30 min. flipping halfway or cook on grill.


Serves: 4      Total cook time: 30 min
