-  - Whip egg whites until stiff. Set aside. ​ 
-  - Mix dry and wet ingredients separately, then combine, except the egg whites. 
-  - Heat ebelskiver pan and put small amount of butter in each well. 
-  - When butter sizzles a bit, pan is ready. 
-  - Fold egg whites into combined batter. 
-  - Drop about a tablespoon of batter into each well, being sure the batter does not fill the well more than 2/3. 
-  - Keep heat between medium and low temp., and gently pull ebelskivers up and turning as they bake. It will take about four or five turns, with baking time of about 1/2 minute between turns, for the ebelskivers to be baked completely. 
-  - Gently open one ebelskiver from each batch to be sure it is baked before serving. 
-  - Ebelskivers may be kept warm in a 200 degree oven, while all batches are baked. 
-  - Serve with applesauce, sour cream and brown sugar. ​ Ebelskivers can also be served with jam, lemon curd or other accompaniments. Some recipes also put a small sliver of fruit inside the ebelskiver, and that will increase baking time.
