Dutch Leek Casserole

  • 3-4 lb potaotes - peeled and chopped
  • 1/4 cup milk
  • 2 lb (3 med/large) leeks - chopped
  • 2 Tbsp olive oil
  • 3 onions - chopped
  • 2 red bell pepper - chopped
  • 2 green bell pepper - chopped
  • 1 green chile pepper - finely chopped
  • 3 carrots - peeled and chopped
  • soy sauce to taste
  • 1 lb ground beef
  • 6-8 oz Cheddar cheese - shredded
  • 6 oz cooked ham - cut into strips (optional)


  1. Preheat oven to 350 deg.
  2. Bring large pot of salted water to a boil and cook potatoes until tender but firm, about 15-20 min. Drain potatoes, transfer to large bowl, and mash together with milk.
  3. In large skillet add small amount of water and cook leeks until tender, about 10 min. Add to large bowl with potatoes when done.
  4. In large skillet add olive oil, heat to med-high, cook onions, red pepper, green pepper, carrots, and chile pepper. Season with soy sauce and cook until tender. Add to large bowl when done.
  5. In large skillet cook and stir the ground beef until evenly brown. Add to large bowl and mix all ingredients together.
  6. Spread the mixture evenly in baking pan (dark 9×13) and sprinkle with shredded cheese. If using ham, lay strips on top.
  7. Bake 25 min. in the preheated oven, until bubbly and lightly browned.


Serves: 8        Total cooking time: 1:5 min.
