Curried Sweet Potato Soup
1 Tbsp olive oil
4 cups chopped onions (approx. 3 med)
1 tsp kosher salt
1 Tbsp minced garlic
1 Tbsp minced ginger root
2 tsp curry powder
1/2 tsp garam masala
6 cups low sodium chicken broth
3 lb sweet potatoes - peeled and chopped
2 tsp lime juice
8 tsp fresh chopped cilantro
Heat oil in soup pot or dutch oven. Add onions and salt, cook stirring often until onions softened, about 10 min. Add garlic, ginger, curry powder, and garam masala; stir and cook 1 min.
Add broth and potatoes; bring to boil, reduce heat and simmer until potato is soft; about 15-20 min.
Puree soup either in pot or transfer to blender. Stir in lime juice and serve in bowls garnished with cilantro.
