Cranberry and Mango Compote

  • 1 package (12 oz.) fresh cranberries
  • 1cup + 2Tbsp sugar
  • 3/4 cup water
  • 1 1/2 large ripe mango peeled and cubed - can substitute frozen mango chunks
  • 3/4 tsp vanilla
  • 3 Tbsp orange flavored liqueur -Cointreau, Grand Marnier, Triple Sec, Gran Gala, Mandarine

  1. Combine cranberries, sugar and water in saucepan. Bring to slow simmer, stirring only to mix in the cranberries that rise to the top. Cook until cranberries are tender and bright red, about 30 min.
  2. Add the mangoes, vanilla and orange liqueur, and return to a simmer.
  3. Remove from heat, cool and refrigerate. Refrigerate overnight for best mixing of flavors.
  4. Note: very good on French toast, either on its own or mixed with maple syrup.

Serves: 8-10        Total Prep: 30 min. + overnight refrigeration
