Cinnamon Roasted Potatoes

  • 1 1/2lb Yukon gold potatoes - cut into 1 1/2“ chunks
  • 6 unpeeled garlic cloves
  • 3 Tbsp extra virgin olive oil
  • 1 cinnamon stick - break into pieces
  • 1 tsp kosher salt
  • 1/2 tsp pepper


  1. Heat oven to 325 deg. Spray bottom of 9×13 pan with nonstick spray.
  2. Put all the ingredients in bowl or roasting pan and mix until combined.
  3. Transfer to oven and roast, stirring once or twice, until potatoes are tender, about 1 hr 15min.
  4. Raise oven temperature to 450 deg and cook until potatoes are crusty, brown and tender, about 15 min.
  5. Recipe can be doubled or tripled to use 5 lb bag.
