Chickpea Salad with Red Onion and Tomato

  • 19 oz. can garbanzo beans - drained
  • 2 Tbsp chopped red onion
  • 2 cloves garlic - minced
  • 1 tomato - chopped
  • 1/2 cup chopped parsley
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • salt and pepper to taste


  1. In large bowl combine all the ingredients.
  2. Chill for 2 hours before serving. Taste and adjust seasoning.


Serves: 6       total time: 15 min. prep + 2hr chill
