Cheesy Baked Gnocchi with Kale

  • 2- 16 oz. packages gnocchi
  • 10 oz. kale - washed,stemmed and chopped
  • 3 garlic cloves - minced
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 1/2 cups milk
  • 2 Tbsp lemon zest
  • 1/2 cup shredded Parmesan

  1. Preheat oven to 400 deg. Grease 2-qt baking dish; set aside.
  2. Cook gnocchi according to package directions, add kale for last minute. Drain and return pasta and kale to pot.
  3. Meanwhile, in a saucepan cook garlic in butter over medium heat for 1 min. Stir in flour to combine. Whisk in milk, cook and stir until thickened and bubbly. Stir in Fontina and lemon zest. Pour over gnocchi mixture, stir to coat. Transfer to prepared baking dish. Alternative mix with gnocchi/kale in baking dish.
  4. Top with Parmesan. Bake 20 min. until lightly browned and bubbly.

Serves: 6     Total cooking time: 40 min.
