Braised Greek Chicken and Artichokes

  • 1 Tbsp olive oil
  • 4 chicken breast halves with skin and bones
  • 2 6oz jars marinated artichoke hearts - drained with 2 Tbsp reserved
  • 3/4 cup low fat chicken broth
  • 1 Tbsp lemon juice
  • 1 tsp grated lemon peel
  • 1/4 tsp crushed red pepper
  • 3 Tbsp chopped fresh oregano


  1. Heat oil in large heavy skillet. Sprinkle chicken with salt and pepper. Add to skillet and saute until browned on all sides about 10 min.
  2. Add 2 Tbsp reserved marinade, broth, lemon juice, peel, and red pepper. Reduce heat to low, cover, simmer until chicken is almost cooked through, about 10 min.
  3. Uncover, stir in artichokes & 2 Tbsp oregano. Simmer until liquid is slightly reduced and chicken is cooked through, about 5 min.
  4. Stir in 1 Tbsp oregano and season with salt and pepper.
