Black Bean Burgers

  • 1 cup dried black beans (adzuki beans work well)
  • 1 bay leaf
  • 2 onions chopped
  • 3 cloves garlic - chopped
  • 1 Tbsp oil
  • 4 carrots - peeled and grated
  • juice of 1 lemon
  • 4 Tbsp fresh parsley - chopped
  • 2 Tbsp soy sauce or Worcestershire sauce
  • 3/4 cup bread crumbs or rolled oats or cooked brown rice
  • 1 egg - beaten
  • salt to taste
  • ground black pepper to taste
  • bread crumbs for coating

  1. Soak the beans overnight. Drain, add fresh water and bay leaf, cook until tender, about 1 hr. Drain beans reserving the liquid.
  2. Saute the onion and garlic in the oil until transparent. Add the carrot and lemon juice and sweat until soft.
  3. Add the beans, mix well and puree in food processor, adding a little bean water if required.
  4. Stir in the parsley, soy sauce, crumbs, egg and salt and pepper. Place in refrigerator to cool down.
  5. Scoop onto bread crumb covered surface and form into patties. Sprinkle top with bread crumbs. Fry until brown and crispy on the outside.

Alternative spicing: 1 Tbsp chili powder, 1 tsp ground cumin, 1 tsp hot sauce
Alternative toppings: Mayonnaise plus lemon juice, salsa, sour cream

Serves: 6      Total Cook Time: 6+ hour soak + 1 hour beans + 15 min. burgers
