Basil Goat Cheese Pizza
1 lb bread or pizza dough - Trader Joe's refrigerated whole wheat pizza dough works well
1 Tbsp olive oil
1/2 tsp ground black pepper
salt to taste
1 bunch fresh basil leaves - chopped
2 tsp minced fresh rosemary
3/4 cup Italian tomato sauce
4 oz. crumbled goat cheese
1 bunch fresh basil leaves - chopped
Allow dough to rise per package directions. (Trader Joe's 20 min. at room temperature)
Preheat oven to 425 deg.
Roll or stretch the dough on floured surface into 15“ circle. Roll the edges towards the center to form a crust, leaving a 12” circle.
Coat the entire crust with olive oil, fingers work well. Sprinkle with pepper, salt, 1 bunch chopped basil leaves, and rosemary. Bake in preheated oven until crust just begins to turn golden, 7-8 min.
Spread the crust with tomato sauce. Sprinkle the goat cheese and remaining chopped basil over the top. Bake in oven until the crust is brown, about 9 min.
Serves: 2 Total cook time: 15-16 min.
