Barley and Mushroom with Beans Soup

  • 2 tsp olive oil
  • 6 cups sliced fresh mushrooms
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 4 cloves garlic - minced
  • 1 cup uncooked barley
  • 6 cups vegetable broth
  • 1 tsp basil
  • 6 bay leaves
  • 1/2 tsp black pepper
  • 48 oz jar white beans - drained


  1. Heat oil in a stockpot over medium heat and stir in mushrooms. Saute to give up liquid, add onions, celery, and garlic and saute.
  2. Mix barley, vegetable broth, and spices into the saucepan. Bring to a boil, cover, and reduce heat. Simmer 45 min. until barley is tender.
  3. Mash 1/4-1/3 of beans with potato masher. Stir beans into the barley mixture and continue cooking for 30 min.


Serves: 8       Total Cook Time: 1 hr 30 min.
