Black Bean Burgers
1 cup dried black beans
2 onions chopped
3 cloves garlic, chopped
salt and pepper to taste
Soak the beans overnight, then cook with a bay leaf until tender.
Saute the onion and garlic in oil until soft.
Puree the beans, stir in the aromatics, form into patties, and fry until crispy.
Freezes well. Adzuki beans work nicely in place of black beans.
Serves: 6 Total cooking time: overnight soak + 1 hour beans + 15 min burgers
