1 cup beer - 1 hr standing
3 cups cubed rye bread
1 head cauliflower - cut into bite-sized florets
2 Tbsp butter
1 tsp caraway seeds
8 oz. (3 cups) extra-sharp cheddar cheese - grated
4 eggs
1 tsp dry mustard
1/2 tsp ground coriander
fresh ground black pepper
At least 1 hr before cooking, pour the beer into a shallow bowl until it becomes flat.
Dry the bread cubes on a baking sheet in a 300 deg oven until they are crisp but not browned, about 15-20 min.
Saute the cauliflower in the butter with the carraway seeds until just barely tender.
Combine the bread cubes and cauliflower with grated cheese.
Spread the mixture into buttered 3-qt casserole dish.
Mix the eggs, mustard, coriander, and black pepper together with the flat beer. Pour the mixture into the casserole dish.
Bake at 350 deg. for 35-45 min. until puffed and golden.
