Greek Spinach and Rice (Spanakorizo)

  • 1/3 cup olive oil
  • 2 onions - chopped
  • 1 clove garlic - minced
  • 10 oz. pckg frozen chopped spinach - thawed and drained (alternative: 2lb fresh spinach)
  • 15 oz. can diced tomatoes (alternative: 2 large tomatoes - coarsely chopped)
  • 1 Tbsp tomato paste (optional)
  • 2 cups water or broth
  • 1 tsp dried dill (1 Tbsp fresh)
  • 2 Tbsp fresh parsley or 1 tsp dried
  • salt and pepper to taste
  • 1 cup rice
  • feta cheese - sprinkle on servings


  1. Heat olive oil in medium sauce pan or large skillet. Saute onions until golden and tender.
  2. Add spinach and garlic and cook for a few minutes.
  3. Add the tomatoes and liquid and bring to a boil. Add the spices.
  4. Stir in the rice, return to a boil, cover and simmer until rice is tender and fluffy, about 20 min.
  5. Serve on dish and sprinkle with feta cheese.
