Thaw and cook spinach until hot. Add cold water to stop cooking. Squeeze water out of spinach either with colander or by hand and add to food processor bowl. Blend spinach thoroughly.
Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk. Add nutmeg, salt and pepper to taste. Cook, stirring, about 5 min then add the spinach. Stir to blend. Heat and serve.
