Parsnip Apple Mash


  1. In medium saucepan combine the parsnips, apples, and water. Cover and bring to boil. Simmer covered for 15 min. Remove lid and continue to simmer until tender and liquid level is reduced, about 10-15 min.
  2. Add butter and mash until smooth with potato masher, portable mixer, or food processor. Season with salt and pepper.


Serves: 5-6     Total cook time: 30 min.
