====== One-Pot Pasta with Tomatoes ====== *1 lb pasta *1 lb cherry tomatoes - halved *2 lemons - zested *7 Tbsp olive oil *2 tsp salt *1 bunch kale or spinach - washed, destemmed and chopped *salt and pepper to taste *optional: chopped basil,oregano,mint *optional: red pepper flakes *1/2 cup grated parmesan cheese \\ - Bring 1 qut of water to boil. - Place pasta, tomatoes, zest, oil, and salt in bottom of large pot. Add the hot water to the pot with the pasta. Cover and bring to a boil. Remove lid, simmer 6 min. - Add the greens, until liquid is reduced to sauce and pasta is cooked, approx. 6 min.
