====== Dutch Leek Casserole ====== *3-4 lb potaotes - peeled and chopped *1/4 cup milk *2 lb (3 med/large) leeks - chopped *2 Tbsp olive oil *3 onions - chopped *2 red bell pepper - chopped *2 green bell pepper - chopped *1 green chile pepper - finely chopped *3 carrots - peeled and chopped *soy sauce to taste *1 lb ground beef *6-8 oz Cheddar cheese - shredded *6 oz cooked ham - cut into strips (optional) \\ - Preheat oven to 350 deg. - Bring large pot of salted water to a boil and cook potatoes until tender but firm, about 15-20 min. Drain potatoes, transfer to large bowl, and mash together with milk. - In large skillet add small amount of water and cook leeks until tender, about 10 min. Add to large bowl with potatoes when done. - In large skillet add olive oil, heat to med-high, cook onions, red pepper, green pepper, carrots, and chile pepper. Season with soy sauce and cook until tender. Add to large bowl when done. - In large skillet cook and stir the ground beef until evenly brown. Add to large bowl and mix all ingredients together. - Spread the mixture evenly in baking pan (dark 9x13) and sprinkle with shredded cheese. If using ham, lay strips on top. - Bake 25 min. in the preheated oven, until bubbly and lightly browned. \\ Serves: 8 Total cooking time: 1:5 min.
