====== Blackened Catfish ======
  *2 tsp cayenne pepper
  *2 tsp lemon pepper
  *2 tsp garlic powder
  *2 tsp salt
  *2 tsp pepper
  *1-1 1/2 lb catfish fillets
  *1 cup Italian salad dressing

  - Preheat oven to 350 deg. Non stick spray medium baking dish
  - In shallow bowl mix cayenne pepper, lemon pepper, garlic powder, salt and pepper
  - Brush and rub fillets with cooking oil. Coat with 1/2 of spice mixture. Flip over and do the same to the other side.
  - In non coated pan over medium high heat cook fillets approx. 2 minutes on each side, until slightly blackened.
  - Arrange fillets in a single layer in the prepared baking dish, and coat with Italian dressing. Bake 30 min until the fish is easily flaked with a fork.
